what can i do with my rack of lamb?

i normally make a basil butter, spread that on top then pat loads of pinenuts all over it.

its very easy and lovely.
but fancy a change

any ideas?

Herb crust? Rosemary, mint, breadcrumbs, dijon mustard - I did this from the bbc food website for friends and it was lovely.

It is not it but it is close, I didn't make the jus

You mix the herbs together with some oil and breadcrumbs, sear the lamb, put some dijon on the outside and then press the crust onto it, cook for 45 ish mins (depending on pref)..

Yes and it was easy and delicious. I did it a bit longer than 25 mins though, more like 45mins and it was still pink and lovely.

Just wondering, sorry to hijack - I am from Aus and love this cut of lamb but can't find it stocked in any of my local supermarkets? Is it readily available here?

yes you can get it from your butchers or sainsburys tescos or like today i got my from waitrose

I think they have racks of lamb in Waitrose sometimes, if you have a good butcher he will have it and can trim all the fat etc.

the one i brought today was about 6.50 [which i thought was pretty good] and was very well trimmed
