A "sweet" recipe for sweet potato please?

Got a couple of large sweet potatoes in the veg box this week and it's one of the only vegetables I really don't like - I find it much too sweet for veg.

Is there a pudding or a cake type thing I can make with it?

not sweet, but you can make a gorgeous soup with sweet potato, squash, red lentils and chilli flakes. Yum.

ingredients :

675g sweet potaoes, peeled and diced
1 tbsp butter, melted
125g demerara sugar
3 eggs
3 tbsp skimmed milk
1 tbsp lemon juice
grated rind of 1 lemon
1 tsp caraway seeds
125g dried fruits eg, apple, pear, mango chopped (i used sultanas, i think)
2 tsp baking powder

18cm square cake tin (greased/lined)

oven 160 c/325 f/gas mark 3, 1 - 1 1/4
hours, or till cooked

method :

cook potatoes in boiling water till soft, drain, mash till smooth

transfer to a mixing bowl, while still hot add butter & sugar, mix to dissolve

beat in the eggs, lemon juice and rind, caraway seeds and dried fruit. add baking powder and mix well.

pour mixture into prepared tin

cook as above

cool on wire rack.

delicious with creme fraiche or custard as a hot dessert. freezes well. can re heat when thawed.

serves 6. 275 cals / 2 g saturated fat per portion.

I'll try that twoluv. Don't mean to question you, but baking powder and no flour is that right?

yes. don't expect it to look much like a cake - more of a pudding consistency, iyswim. it's low fat, and I wasn't sure about the caraway seeds, having dreadful memories of them in cake when I was young, but they do add a certain something....hope it works for you
