need to do my shopping list but stuck at spuds & 3 lots of fresh mince. . . .

what's on your meal plan/shopping list this week?

I always seem to end up buying the same stuff so we end up eating the same stuff which whilst it's not literally the same thing on the same day because I shop for 3 weeks at a time, is starting to get a bit boring.

Last night was pollock (dead cheap) with tomatoes, olives, red peppers, spring onions, basil, topped with bread crumbs and grated parmesean and baked in the oven sreved with rice.

Tonight is steak, chips, mushrooms, asparagus and corn on the cob.

Tomorrow is chicken and butternut squash risotto (I think)

Saturday is roast Pork with all the trimmings and SUnday we are out at ILs to celebrate dd's birthday.

oooh, something different to do with fish! I'll try that one on my oh next week, cheers ComeOVeneer.

We had risotto with the lo last night as she's only eating rice atm so will pass on that for the mo but never put chicken and butternut squash together before so will try it the week after

Last night we had mushrooms on toast - sounds little, but was delicious. I followed Nigel Slater and mixed a few anchovy fillets into the mushrooms a couple of minutes before serving, which give an oomph to the flavour.

Tonight is mussels, dead cheap where I am.

Friday night I'm doing probably turkey, maybe chicken curry.

meatballs and spagetti

Sausages, veg and mash

Roast chicken (i can make a chicken last for 3 meals in our house)

Roasted Veg with feta cheese

Cottage pie

Pork chops ,veg and roast potatoes.

A lovely dish is skinless chicken thighs and drumsticks that are browned in a pan, then with a sauce made from porcini and other mushrooms, onions and chunks of pumpkin (or some type of squash) fried until soft then mix in some double cream, season and add thyme and rosemary baked until chicken is cooked (about 30-40 mins at 180-200c). Serve with wild and long grain rice and side salad.

We tend to have a roast every other week so I still have a load worth of leftovers in the freezer I may try that dish with. My oh is fussy about squash though, only thing e really likes it in is mash with a roast for some reason although he will eat pretty much whatever I put in front of him. & if he's not keen I'll try it with the lo on a footy night. It sounds very tasty.
