like risotto type dishes or anything really so long as it has rice. Is rice every day at some point too much of the stuff or do I just humour her for a while & then start trying something different again?

I'm a bit baffled by fussy eating as it's the first time she's ever not eaten what she's been given but there are so many threads with people worrying about fussy eating I'm wondering if humour her when it comes to main meals and make sure she eats a variety of healthy snacks is the way to go . . .

Any views? or suggestions?

Rice is staple diet for millions of people, I don't think it can do any harm.

And there are soooo many ways to vary rice.
