vegetarian fajitas?

i've got people coming round and one is a pescatarian. i want to make fajitas so was going to have:

cheese
refried beans
lettuce
guacamole
tortilla
chicken / red pepper / onion with tomato mix (hot)

obv the vege can't eat the chicken which is really the main filler, but i feel a bit mean just doing a red pepper / onion mix for her. what else can i put in it, bearing in mind i have a toddler and a baby so time is somewhat limited!

In the past, I have also sometimes added a can of beans to the veg mix - like some kidney beans, etc. Or baby corn and carrots. Yummy!

Maybe you could try Quorn chicken-style pieces? We have cheese (lots and lots!), refried beans and/or the quorn pieces, salsa style sauce, lettuce, spring onions, sometimes peppers and Greek yogurt. God I feel hungry now. Might just make that for tea tonight

Our veggie fajitas have onion, red & yellow peppers, courgette, mushrooms and sometimes baby corn. Always a favourite meal in our house.

heh - 95 messages does seem extraordinary.

right. have bought red kidney beans and adiko beans (?). will stick them all together in a stewey type thing.

Just use Quorn pieces for everyone. Delicious IMO.

We've just had some (like 10 minutes ago!) with a tin of mixed pulses, a tin of tuna and a tin of ready made fajita sauce. They were yummy. Obviously you could make your own sauce if you have more than 5 mins to rustle up tea (gymnastics tonight - late home and starving kids!)
