Have been known to spread some tapenade on white fish fillets and then roast but TBH I tend to just drizzle on a bit of oil/butter,
salt, pepper and maybe a bit of lemon and then grill.

My colleague raves about this but I haven't tried it - in layers in a dish put slices of potato (parboiled? does that mean partly cooked??), a layer of fried onions, lots of black olives, then white fish - he uses cod - (fish not cooked), then more potatoes, top with layer of fried onions and bake. No liquid apparently. I am a bit about ending with the layer of fried onions but he says they go crispy on the top and it really works. Sounds like one of those spanish dishes where they use hake. I do keep meaning to try this!

Get fillets/steaks of white fish (ideally skinless and boneless) - lay in buttered oven dish.
Pour over them an italian-style tomato pasta sauce, eg a loyd grossman ready-made jar type one (or make your own with fried onions and garlic, tin of tomatoes, seasoning, herbs, bit of wine etc.)
Bake for about 25 mins on medium heat eg gas mark 5-ish.

Check fish is cooked through, give it another 5 if not.

Serve with mashed potato and a green veg such as green beans or broccoli.

Salmon fillets with lemon, pesto and creme fraice. Bake in tinfoil for about 7 minutes, then open tinfoil and bake for another 3 - 4 until done.
