I have 4 packets of Filo pastry..any suggestions please??

Just done a stock take of my freezer and discovered 4 packs of filo pastry...god knows why I have that!! What can I cook to use it up, would like ideas for mid week meals to feed family please!

This is the recipe I use. It recommends puff pastry, but filo is lovely too!

Would they eat samosas? I have a recipe with either minced lamb or potato that I can give you if you'd like.

Brik a l'oeuf thingy

Oil in pan,lay filo over it. Spoon tuna in, then crack over an egg, then some capers. Wrap filo over it like parcel.Cook for few mins.

Salmon fillet with asparagus "almost en-croute"

6in square of puff pastry. Place a salmon fillet diagonally across. Top with 1 tsp of green pesto and smear. Lay an asparagus tip across top (as a mid week meal maybe omit this) and fold corners up and across parcel. Brush with beaten egg and bake for 20mins.

you could also cut into strips twist two strips together - paint with melted butter and sprinkle cheese over the top to make cheese sticks.

Any kind of stew in a dish. 4 layers of filo pastry brushed with butter/oil on the top. Bake in the oven.

Soften leeks in butter - add crumbled stilton. Make samosa type parcels filled with the stilton and leek mixture. Serve with salad and creme fraiche.

I do a nice courgette and cheese pastry thing.
it uses a whole sheet to make the base and sides and you make the filling. very easy.
