unrefined soft light brown sugar (yum yum) - not crystalline like demerara but with a tiny soft-gritty feel - need to make sure it stays dry, though.

So, alternatively - very fine polenta (cornmeal)? - or if that's too boring-tasting when the cake's eaten, a handful of polenta mixed with sugar, as above?
