Does anyone have a simple recipie for tomatoe sauce to put over pasta or meatballs?

Something that is easy to make but tastes nice. Tinned tomatoes taste gross on their own.

Chop an onion and fry along with some garlic. Add two tins of tomatoes, and a little sugar (eg half-teaspoon), and the usual seasonings. Heat and simmer until it has reduced to about half the original quantity.

When it is done, and cooled a little, whizz it up with a stick blender until smooth. Check the sweetness and seasoning and you are done.

I use tomato puree and a tiny bit of fresh basil too (and sometimes a bit of red wine)

I chuck quite a bit of oregano in - or paprika for colour and sweetness. Squeeze of lemon too?

tin tomatoes
sundried tomato paste
tomato puree
herbs
red wine

put in pan and let it simmer for 5 minutes

tis relatively fat free if you don't use sundried tomato paste

This or just check out the recipe section under vegetarian - there seems to be a few. Dior had a yummy one that I have just tried to search for a lot of her posts have been deleted. But not all funnily enough.

My best one is from the Harry's Bar cookbook, from Venice. Fry a little bit of onion and chopped garlic, add tinned tomatoes (but ones from Italy and whole ones, not chopped ones), salt & pepper then cook for ages. 5 mins before it's ready, add lots of chopped basil.

I fry half a chopped onion, add tinned tomatoes, bay leaf, oregano and garlic puree. Simmer, remove the bay leaf, check seasoning. Sometimes i add peppers.

If you want to smuggle some extra veggies into your dcs you can also put finely chopped carrot and celery in with the onions.
