Am in Spain and am pretty sure I won't find it anywhere if other years are an indication...

Anyone have a recipe? Preferably without suet as that'll be hard to get too....

Mincemeat

3 large apples (not too big)
8oz raisins
8oz sultanas
2oz peel
8oz soft dark brown sugar
Juice of 2 lemons
1 level teasp mixed spice
½ level teasp nutmeg
¼ teasp salt
4 tablesp rum or brandy ( I always used brandy)
2oz almonds
2oz cherries (I left these out as I HATE them)
6oz currants
4oz shredded suet
Grated rind of lemons

Chop all ingredients and mix well together. Cover and leave for 2 or 3 days, stirring a couple of times each day. Put into clean dry pots. Seal and store in a cool, dark place.

Pastry for Mince Pies

4oz castor sugar
4oz butter
4oz hard margarine
4oz cornflour
4oz selfraising flour
4oz plain flour

  1. Cream marg, butter and sugar.
  2. Add flour.
  3. Bind together in beater. (or whatever)
  4. Bake at 160.

My fave is the delia smith one. I double it to enable a good few mince pie making sessions on the run up to Christmas!

Ok, am going to do a combination of those recipes. If I don't use suet can I use butter instead?
Can I use ordinary jam jars with screw-on lids to store it in if I sterilise them in the oven first?
