Bought it on offer now needs to be used up. Ideally in an evening meal - was thinking carbonara as a substitute for bacon??

Is it quite chunky slices?

Carbonara sounds good, maybe a ham and pea risotto? Maybe warm it through (is that safe!?) and serve with apple sauce, potatoes and greens.

Freeze some of it. I do that, but don't leave it too long as it isn't nice, but a few weeks or even a month is usually fine.

put it in macaroni cheese instead of bacon.
Wrap leeks with it and cover with cheese sauce.
Mix it with onions, leeks, mushrooms and creamy sauce and make a pie out of it with a pastry lid/ mash on top.

Ooh yum. Might try the pie. Thanks!
