I've had a fudge disaster....

The other week on This Morning Phil Vickery made some fudge. It looked simple enough so thought I'd have a go...

It hasn't set!!!!

The ingredients are butter, sugar, condensed milk and milk. I got to the soft ball stage (or so I thought even though it did ball when put in cold water), took it off the heat and beat before pouring it into the tray/tin.

That was this morning - have just tried to remove it and while the loose base came out of the tin okay it is too gooey to come off the baking paper! It's more like a thick caramel than fudge!!

So, any ideas on what went wrong? I have enough ingredients to do another batch...

Also, what can I do with the goo? Uses as a fudge sauce with ice cream perhaps??

Am off now - dd2 howling!

I'm no expert on what went wrong, but it soundslike you could make banoffee pie with the result

Non setting can be caused by not beating it enough. Re-heat it, beat it some more, it'll probably be ok.

ooh okay - is there a rule of thumb on how long for?

And does it need to go into the fridge or not?

(am fudge novice - can you tell??)

yes, warm it through again and beat it more - it'll be fine! (just be careful not to burn it...)

I've had a few fudge errors, last batch worked out ok, I beat it til it started to feel grainy under the spoon and around the sides of the pan iyswim. Takes longer than you think!

I saw on another thread that putting fudge in the fridge causes it to absorb moisture and it won't set.
