souping up shop-bought mincemeat?

we're planning to make mince pies this afternoon, so no time to make mincemeat from scratch - any tips for making the jarred stuff a bit nicer? Was thinking of adding some grated apple, lemon and orange juice/rind, bit of rum, some flaked almonds - and just letting it all cook together on a simmer for a little, while we make the pastry.
WIll this work??

Probably too late, but I always add a good slug of brandy to bought mincemeat.
