What shall I do with this haunch of venison?

Need some recipe inspiration please. I have some redcurrants left over from summer picking in the freezer so I'm tempted to use them somehow but that is as far as I've got.

Also, any tips for keeping it moist and hopefiully tender? I've never cooked a big joint of venison before and I'm worried about it drying out.

we are doing venison for christmas, and might do this.

thanks for the suggestions.

The biggest thing I am worried about is it drying out, will have to use some of those tips. Quite tempted to do the first link with a leg of lamb rather than the venison.
