Anyone got a nice crumbly/chewy ginger biscuit recipe?

Mine are all a bit hard - & I'm feeling all wet & weak atm (post chest infection) so can't be bothered to crunch

These stay pretty gooey:

115 grams / 4 oz of butter
200 grams / 7 oz of white sugar
1 tablespoon of golden syrup
1 egg
225 grams / 8 oz of flour
1 teaspoon of baking powder
3 teaspoons of ground ginger
2 teaspoons of mixed spice
½ teaspoon of baking soda

Preheat oven to 180°C, 350°F or gas mark 4. In a large bowl cream together the butter and sugar, add the golden syrup and the egg. Mix thoroughly. Add the flour, baking powder, ginger, spice and baking soda and mix until well combined. Roll into small balls, and place on lined baking tray allowing room to spread. Do not flatten! Bake for 15 minutes.
