Can I make mincemeat using butter instead of suet?

Help. I am in the US and have not found a source for vegetarian suet. I want to make my own mincemeat but I know if it doesn't have any fat it will dry out during cooking. Does anyone know if I can melt butter and mix it into the fruit or could I use olive oil?

Definitely definitely not olive oil. That would taste actively unpleasant. I can't see butter working properly either, to be honest (although definitely better than oil... if you do end up experimenting with butter, chill it very very cold and chop it very finely).

You can buy vegetarian suet here, though.
