Suggestions for veg to stick in macaroni cheese please

DS generally eats a good varied diet, but is very very fond of macaroni cheese. I quite often include either broccoli or cauliflower when making it but wondered what other veg work well? (Given that he would quite happily eat it for tea every day, I am inclined to make up half a dozen veg packed varieties and alternate them).

Broccoli and cauliflower do sound good.

How about onion and/or green or red bell peppers? spring onions? or mushrooms?

If you add the mushrooms, cook them in the microwave first to get rid of the excess mushroom juice to help prevent the dish from turning grey.

Spinach. Esp if frozen - stick it in the sauce and they don't even really realise that there's veg in there.

He's 4 and not averse to veg anyway (went through a stage of tantrumming if we walked past the veg stall in the market without buying broccoli) - just fancied some new ideas, thanks all. though I will skip the mushrooms as DS doesn't like them.

i make a cheesey veggie pasta bake with peas, carrots,sweetcorn,leeks, red pepper and onions in it
