Venezualan Black, 100 percent Cacao - how do I use it?

Hi, has anyone cooked with this?

www.ocado.com/webshop/getSearchProducts.do?clearTabs=yes&entry=venezualan&=Search

Their website has a recipe for 'cloud cake' which involves melting it in butter and folding into a whipped meringue type mixture, but I'd like to make a chocolate fudge cake or similar. Can I grate it and use it in place of cocoa powder? Anyone know?

Cacao or Cocoa? - I need to make this cake before I go to bed - and I'm only going to get one shot at it.

Please Help... I've haven't been let down on the Food board yet.

Venezuelan black? Sounds like the kind of thing you smoke.

I keep meaning to buy some as he lives in the same town as me and they sell it in our local health food shop but it's hardly ever in stock!

LiberalIdleOlogy · 05/12/2008 22:25

Oh god, that's why I'm not getting much of a response - written off as a junkie!

I bought it in Waitrose bluebump. (Not sure about his business acumen if his local shop can't maintain a decent supply). I made hot choc with it, but the rest has now been sitting in the cupboard for months as I really have no idea what to do with it. Smells great though.

Hey the best way to cook it is to slowly melt it in a glass bowl over how water, once melted you should be able to use it as other chocolates... |I don't recommend you flake it as it wont blend properly.

hope this helps

LiberalIdleOlogy · 05/12/2008 22:31

Ah Thank you! (I suspected it wouldn't blend).

Mumsnet 'Food' record remains unblemished! I'm sticking with G&B cocoa this time.
