I fry onions and mushrooms and make a lovely creamy sauce, for pasta or rice

brilliant - why oh why haven't i discovered this before? there's me making white sauce with cheese and this looks like a quicker alternative.

Add to a sauce with mussels, swirl into soup, mix with panfried wild mushrooms with pasta, mix in chopped herbs and add to warm potato salad, add it to the side of tarts/fruit. Basically use it anywhere you might consider using cream.

Another nice one is mix it with horseradish and serve with poached salmon. You can flavour it with herbs, lemon, capers, all sorts. Never without it in my fridge. Another good one to have (especially for quick pasta sauces) is mascarpone cheese.

I also use for cheese sauce on lasagne.

Just mix grated cheese and creme fraiche together and put on top of lasagne (no need to heat first).

Wish I'd discovered it years ago

Ok:

serves 2:

so: fry 1 small onion and about 100g of bacon (or pancetta, if you have it) in pan till onion is soft and fat running on bacon (gently, don't burn)

meanwhile boil 250g spaghetti

2 eggs mixed with 2 large spoons of creme fraiche
grate about 75g of parmesan (or similar hard cheese) and mix into eggs & creme fraiche.
season to taste - black pepper really

pour off spaghetti water and return spaghetti to pan (heat still on underneath - move fast): mix in the bacon and onion.

turn off heat and pour in egg & cheese mixture. quickly mix through (don't allow egg to get clumpy and scrambled).

serve!

Blitz with blue cheese, lie horizontally in front of television, and dip chips/crisps/crusty bread/anything not off in the fridge into it.

I'm in a very snack-oriented frame of mind today, meals aren't popping to mind...
