I make a lovely chicken pie with leeks although I guess you could add mushrooms instead. Its gorgeous but not for weight watchers or non-drinkers.

I saute the chicken and veg in butter till veg softened then add spoonful of flour, cook out a bit before adding small glass wine and equal amount stock. Cook for about 15 mins before adding 150ml approx cream before putting on pastry top and baking.

Get a tin of condensed chicken soup in. Soften a small choppen onion in a pan with some bacon. Add the sliced chicken & cook until almost done through. Add the tin of condensed soup and about 1/3 - 1/2 can water until sauce is quite thick. YOu can add froxen peas or sweetcorn too if you like. Simmer for abolut 15-20 minutes.
Pour into an ovenproof dish & top with the puff pastry. Bake in hot oven til pastry is golden, risen & hot.

ok, did it a bit different, but that was so helpful.

half pint stock, half pint of white sauce made with cornflour and milk , butter and a spoon of mustard

softened carrots & celery in some stock, and then added the chicken, some sauteed potatos and the white sauce and stirred it all together

in a baking dish, pastry on the top, et voila
