What tasty dish can I make with chicken thighs ?

I prefer chicken thighs but I am a bit bored making curry with them , the other thing I do with them is a tomato based casserole type thing .

Can I please have some yummy new ideas ?

I always make chicken casserole with chicken thighs -
onion
carrot
celery
chicken thighs
corn flour
bottle of white wine

leave for an hour.

serve with rice.

Thank you , I always forget about cooking with white wine , I tend to do more red wine or tomato based stuff .

A whole bottle though ? Could I have a wee one out of the bottle maybe ?

I did one the other day
dry fried lime chicken.

garlic
chopped chillies
loads of lime juice
loads of finely chopped green beans
added a tiny sprinkle from chicken stock cube (instead of salt)

We had it with a kind of wild rice and plain rice combination and it was gorgeous. The colour was lovely too

chicken pomodoro

Ingredients
Serves 4

Prep: 20 min
Cook: 45 min

500g potatoes, peeled
6 or 8 chicken thighs, depending on size
Sea salt and pepper
1tbsp olive oil
400g tinned chopped tomatoes or 400ml tomato passata
2tbsp extra virgin olive oil
2 garlic cloves, crushed
½tsp dried oregano
1 tbsp salted capers, rinsed
2tbsp minced parsley

METHOD

Heat the oven to 190C/Gas 5. Finely slice the potatoes and place on the base of an oiled roasting/baking tin. Trim the thighs of excess skin, season the inside and roll tightly.

Heat the oil in a frying pan and sear the chicken until golden, allowing the fat to drain off. Arrange the chicken on top of the potatoes.

Combine the chopped tomatoes or passata with the olive oil, crushed garlic, dried oregano, capers, sea salt, pepper and most of the chopped parsley. Pour the mixture over the chicken.

Cover the pan with kitchen foil and bake for 30 minutes. Remove the foil and bake for a further 15 minutes until the chicken is tender. Scatter with remaining chopped parsley and serve. [email protected]

Fry onion,s garlic and ginger, add a teaspoon of 5 spice.Throw in chicken thinghs and brown. Add about 6/7 oz of soy and a generous glug of sherry. Simmer for 30 mins. Great with rice and stir fried veggies.

fried. skin off, and soak overnight in water with some soy, cayenne and garlic, then plenty of seasoned flour, leave for 10 mins to get gunky and shallow fry, 20 mins with bone in.

chicken
can of tomato bits
packet of french onion soup
dash of soy sauce
any veges you like
40mins to an hour in the oven or slow cook for a richer flavour.
