Chicken Casserole - I need a good recipe

I always make Coq au vin and Chicken Merengo both have red wine. I need a chicken casserole recipe with no mushrooms (DS hates them) or wine. I'll go for a little cream but its soooo fattening. Any good child friendly recipes pls.

You do realise that the alcohol burns off when you use wine in cooking? There's no reason not to use it when cooking casseroles for children.

(I chop mushrooms up really small in the food processor before adding them to casseroles as both DSs "don't like mushrooms" I think it's the texture they don't like rather than the taste.)

yes,Soup dragon, I did know (sorry I should have said) but gives the casserole a particular taste. I would like to give my family and me something new (cooking with wine for 30 years, time for a change)Any ideas?

I do chicken casseroles with chicken pieces, lightly browned with onion. Then cook it with whole garlic cloves, star anise, a bay leaf, mixed herbs (if I have and feel like it) and then I use a half/half stock/white wine but I imagine it would be absolutely fine with no wine.

Then after about 45 minutes, I add butternut chunks and chickpeas and cook for a further 45 mintues (or so). Then stir in a spoon of plain yoghurt at the end.

I plan to try removing the chicken and the bulk of the chickpeas and butternut then using a hand blender to mash the remaining chickpeas and butternut with the yoghurt to make the sauce a bit thicker, but haven't got around to it yet.
