Found a really good deal on fresh Salmon - now need ideas of what to do with it!

Title says it all really.

I do a nice pan fried salmon with a squeeze of lemon and a twist of pepper.

But any other tasty recipes or flavour combinations would be welcome.

Buy thick slices of salmon with the skin on. Put in a hot frying pan skin side down and cook on very high heat for five minutes - the top of the salmon will still be translucent. Sprinkle with rock salt.

Serve with a salad.

I was thinking of trying this Teriyaki Slamon this week.

The Delicious website has lots of ideas for salmon fillets.

Yes, lovely with oriental-ish sauce on it after cooking like Anna8888 says (sauce could be something like lime juice, fish sauce, soya sauce, sweet chilli and fresh chopped coriander). Serve w rice and greens or salad (but salad sounds too cold on a day like today!).

Or cooked as Anna888 says and put with oriental noodle broth. Or just oriental noodles.

Can also cook and chuck in pasta w creme fraiche, spinach and fresh dill.

I steam about 750 g each week.Then flake and mix with brown rice and soy beans. Dress with soy,wasabi,rice vinegar and sesame oil and have it for lunch all week at work.

Delicious. Could live on it.

It is.Hot or cold.
It's all I eat really when dh away apart from porridge and cheese sarnies.

Slice some vegetables, eg carrots, courgettes, mangetouts, red peppers and put them all in a bowl with juice of a lemon, crushed clove of garlic, 1tbsp olive oil and some chopped herbs (I use lemon thyme, but tarragon also nice). Then put one salmon fillet per person in the middle of a big piece of baking parchment, pile some of the veg on top, make the parchment into parcels, folding the edges over nice and tight and cook at 200 degrees for about 15 mins. Serve with new pots or rice.

Or instead of olive oil and lemon, use soy sauce and sesame oil and half a tsp of dried chilli - then serve with rice rather than new pots.

The oriental ones sound lovely too, but I'll have to go on a special shopping trip to see if I can find the ingredients.

Breadcrumbs add pesto and a some lemon juice if you have it and spoon onto the salmon, bake in the oven till crispy- yummy and the only way my dh will eat it!

Fishcakes or lay on a layer of cubed root veg and herbs and bake in the oven.

Put 4 in a baking dish down one side and in the other side put green beans, anchovies and cherry tomatoes. Drizzle all of it with olive oil and bake in oven till cooked! Yum!

Make white sauce and add flaked cooked salmon and add some frozen peas. Top it all off with mashed potato and grated cheese - easy fish pie - kiddywinks love it!

Also, you can bake it with a little oil and lemon, skin side down, and put some porridge oats on the non skin side. Makes a lovely (healthy) crust.

Am a little late to this thread but this book and the chicken one are fantastic! I particularly rate the salmon thai green curry, and we usually do it by just cubing the salmon in at the end.
