Made one for dessert and did it with a chewy centre but watching Come dine with me and they said crispy to the centre.

What do you do.

No def marshmallowy centre, don't like crispy all the way through.

Also those crispy shop-bought ones are always freakishly white. I reckon they bleach them and that causes the crispiness as a bi-product. Therefore I conclude again:

Chewy = good
Crispy = work of the devil.

Yes I thought chewy but the guests on come dine with me seemed certain they should be crisp all the way through and marked Anneka Rice down - it did look like a crap pavlova though.
