last night I did creamy chicken pasta with some leftovers.
I fried mushrooms, made cheese sauce, with some herbs and bit of mustard and seasoning, added huge handful of spinach plus thin strips of roast chicken (like peeled bits) and served with fetticine.
Would also have tasted yum with some double cream and white wine instead of the white sauce, but not as healthy!
Fry onions until caramelised, add red peppers then chicken strips/chunks, stir in Lloyd Grossman curry sauce, serve with rice, peas, spinach and a chapatti.
Fry small diced onions, fry then add any other veg such as courgettes, carrots, peppers (not too much), and chicken, add risotto rice and some white wine/stock, fry, adding a little stock at a time until rice is cooked, add peas near the end, lovely risotto - mix parmesan cheese in at the end.
