I have a bowl full of cooked chicken.....what shall I do with it?

It is from Sunday's roast chicken. It was larger than ususal so we have quite a lot left over. I need lots of ideas as I am pg and don't fancy anything I can come up with atm.
Prefereably something I can freeze.

chicken egg fried rice, risotto, chicken pie, chicken pasta bake, curry..any good?

Can you get some ready made pastry and make a chicken pie? If you can't face making a white sauce, buy some ready made, sweat some onions in a pan in some olive oil, add finely chopped celery, some chopped carrots, maybe some mushrooms, add the chopped chicken and cook for a couple of mins, then add white sauce and check for seasoning. In a pie dish, line with pastry, or, even better, buy puff pastry and just put chicken mix in bottom with puff pastry on top. Freeze at this point, then when it comes to cooking, just take out of freezer and leave at room temp to defrost, then cook in oven until chicken is bubbling and pastry is golden brown (you can brush with beaten egg to make it even more golden)

soup. how about a vietnamese syle chicken noodle? boil stock with fennel seed, star anise, a cinnamon stick, chilli flakes and peppercorns. strain the stock, cook noodles in it, add chicken, veg - pak choi, spinach, sweetcorn whatever.b serve with shredded spring onions, slivers of ginger and coriander.

i lived on it when pregnant. lush.

Baked chicken mediterranean (sp)

Chicken, Red peppers, onion, garlic, sun dried tomatos, tin of tomatos, basil, white wine. Mature cheddar on top.

When it is all put together, it is like a type of rissoto. We have this alot and had it at the weekend. If you like the sound of it I will type out the ingredients in full and how to make it.

Curry is always good for left over chicken too.

I was thinking chicken pie, but now I have a serious craving for rempy's vietnamese chicken soup, wow! I really need to eat that NOW!
Mmmmmm at fajitas too. Being pg is making me very fussy. Thank you for all suggestions!

thats what i made today, except we had mash rather than potatoe on the top its really yummy and easy and my charges LOVE it

Had leftover chicken yesterday. I made chicken, potatoe and leek soup. Was tres Lush!!
