Roasted veg with halloumi

Peppers, onion, carrot, sweet potato, butternut squash, vine tomatoes, asparagus, whole unpeeled garlic - roasted in olive oil & a bit of rosemary, top with slices of halloumi near to the end of cooking. I like it with salad.

To be honest, when I want to use up veg or just have a realy huge portion of vitamins ( stir fry aside!) I do a mini roast - a chicken breast, maybe, with roast potatoes and loads of steamed veg.

I do a lovely pasta thing with loads of veg in.

Fry up some leeks, courgettes, peppers and mushrooms until really soft and some chopped cooked ham and heat through, then stir in some creme fraiche. Serve with pasta and aprmesan.
