Veggie family coming for tea tomorrow....what can I cook?

...thats quick, cheap and doesn't involve jacket Spuds (which I always seem to give them)

I made a lovelyveg biryani last night.

It was very quick and easy - roast any veg - I used butternut squash and sweet potato and parsnip - as all were in fridge, when brown, add the basmati rice and frozen runner beans add the veg stock and curry paste - didn't have mustard seeds or anything else, so was just stock and curry paste. Shove in oven for 30 minutes TaDa - serve with naan bread or on it's own.

Tip - use lots of veg as otherwise there's lots of rice - this would easily serve 6-8 people.

There are lots of fab veggie pasta dishes. Or you could do pizza. Or risotto is pretty easy (although it does involve a fair bit of last minute work).

That biryani looks very nice.

bean fajitas
like chicken ones but with kidney beans insterad of the chicken

roasted veg lasgane (make as normal lasagne but substitute mince for roasted veg in sauce)

spinach, potato and chickpea curry with rice

Chickpea and veg tagine with lemon and sultana couscous

bean chilli

just shout if you want recipes

They all sound delish. Unfortunately I have spawned a family of vege-phobes who will begin to froth at the mouth if faced with a roasted -butternut- squash- anything

Sausage and mash with onion gravy. You could have veggie and 'proper' sausages.
