Following something my Nigerian sister in law made for us at half term, I did a variation for tea last night , and the kids loved it.
Cook some red lentils as per instructions.
Add one chopped up sweet potato
3 chopped up parsnips
a sprinkling of garam masala
sprinkling of mild curry powder
season
cook until soft.
Fry two onions
Mash all together.
Shape into patties
Dust with flour.
Fry.
YUM.
The children semed to love the sweetness and mild spice.
AND lentils, sweet potatoes, onions and parsnips all count as vegetables, so they eat 4 out of five portions in one go.
If you have time, they can be shaped into little balls and roasted, which is probably healthier.
