I don't really use a recipe but I do use stewing steak instead of mince, add red peppers about an hour before serving, and I do add a square of dark chocolate. (So I guess that is steak, onions, tomato puree, chilli, oregano, red peppers, stock, chocolate. Does that help?)

I make my own mince from steak (that way I know what is in it). Brown mince first and sautee onions, I add cumin as well as the usual chilli and other herbs/spices, a dash of worcestershire sauce, (and I know this sounds odd but trust me) 3 dieced anchovy fillets, some beef stock, splash of red wine ( I have ice cubes of frozen stock and left over red wine for that purpose).

All that goes into the slow cooker with red peppers. The kidney beans and chocolate go in a couple of hours before we eat it, and the children like some tinned sweetcorn in there too.

Serve with rice, gaucamole, salsa, sour cream and grated cheese.

Sorry, I forgot, tin of toms at the beginning, a generous squirt of tom puree (I never measure, just geusstimate) and close to the end I sometimes add a touch of sugar if the tomato is too sharp.

Chocolate goes in just before serving, just long enough to melt it in. Oh, and stir some flour into the onions after you have cooked them. I usually add the puree at that stage too, about a tablespoon or so and cook it though with the flour. (Oh and I add cumin too! Had forgotten) (I usually just fossick through my cupboard adding stuff )

Okay, everyone else's recipes sound way more advanced than mine, so I'm bowing down to their superior cookery knowledge.

I'm usually just: onions and garlic (fry) - mince (brown, with an oxo cube) - tomato puree (lots!) - tin of tomatoes - tin of kidney beans - simmer.

Apparently a good base for anything tomatoey is to really gently fry finely chopped onion, carrot, and celery, so if I had all of those things then I would try that.

Boogeek - how do you do it with stewing steak? In the slow cooker? How small do you chop it up?

And chilli of cuorse, d'oh! I like dried chilli flakes rather than powder. For grownups I'd say a heaped teaspoon of chilli flakes per 2 people.

I made Nigellas recipe for chilli in her christmas book the other day. It was fab and so easy in the slow cooker. It uses shin of beef cut fairly small.

LOL I can't believe in my list of ingredients I forgot BEANS. Of course I add beans.
I just chop it into cubes about, I don't know, 2 cm or so across? Either in the oven for a few hours or (more usually) in the SC.

Steak mince (browned)
Onion, red/green/yellow peppers, leeks, carrots (whatever I have basically!) all fried to soften.
Small tin tomato puree
2 tins tomatoes
Kidney beans and/or butter beans, sometimes sweetcorn
Chilli powder to taste

I also add some porridge oats to mince after browning to bulk it out a bit!

I use pretty much the same as everyone else - the only thing that I think no one else has mentioned is, I use the Kidney beans in chilli sauce. This gives a nice, really mild base. I add more chilli flakes if necessary (depends who is eating it!!)

I love chilli in the slow cooker. Great food for winter or summer and super easy.
