Soup rescue needed

TrillianAstra · 05/11/2008 12:33

I made leek and potato soup, thinking I was being frugal, but it is rubbish and now I feel like I have wasted potatoes and leeks.

My soup is both bland and very very thick. I know I need to add liquid but if I add water it will taste of even less. Please help?

(any suggestions welcome, anything at all)

Lol!

No - cheese could be v. nice.

I'm only messing with you, I think Trill has used it to paster her wallpaper with you know

MrsWalton · 05/11/2008 13:47

Definitly too many tatties!

How do you think she's getting on? I have visions of her up to her elbows in gloopy soup. If she doesn't manage to rescue it, (i hope you do TA) perhaps we should come up with some useful alternative uses.

Papier Mache

Wallpaper paste

Any blockwork needs doing?

MrsWalton · 05/11/2008 13:48

oops x post

Megglevache · 05/11/2008 13:58

Great minds etc.

Flat is rented so I'm not allowed to put up wallpaper. Maybe could do some papier mache?

Batch 1 of experimental soup rescue is underway. I'm being lazy and not chopping anything, just frying lots of garlic, then adding sludge soup and extra stock (from a chicken oxo cube).

Great!

Batch 2?

TrillianAstra · 05/11/2008 14:35

Batch 2 might be tomorrow lunch. I'll keep my remaining sludge in the fridge for now. Thanks for the help! We ate the original sludge yesterday and I wish I'd called for help then.

Make carrot soup

Shed loads of carrots, chopped (or large quantity frozen baby carrots, thawed)
Knob of butter
1pt vegetable or chicken stock
Salt & peppers

Melt butter in large saucepan & fry carrots gently for 5 mins until softening
Add stock
Season to taste
Simmer for 20 mins then allow to cool
Blitz in a blender till smooth

You can add a swirl of cream just before serving

During simmering you could also add a handful of chopped coriander or a medium pinch of ground ginger

Thanks for the recipe Iklboo, carrot soup was next on my list. I was thinking of adding a parsnip, to make it extra sweet, and a (small) potato for texture, what do you think?
