ok... i did cheat cos had loads of old veg hanging around but....
fry two large onions, add garlic, ginger, chilli, fresh coriander, black pepper.
add litre of water and two stock cubes.
bring to boil.
chuck in any bits old veg hanging around... literally anything, even tinned sweetcorn/peas/whatever.
chuck in the chicken. simmer for 40 minutes. take chicken out and shred and then put back in soup.
you could add pasta or rice if you want it more filling.
