Does anyone have a foolproof carrot cake recipe for 1st bday cake?

I don't know why I want to do this to myself as my carrot cakes never turn out right - the carrots always seems to sink to the bottom and they never really rise - does anyone have an easy recipe? Preferably one with icing in the middle as well as on top - thank you!

I follow the Better Homes & Gardens recipe - works every time.

If you want icing in the middle as well as the top just make two shallower cakes, or cut the cake in half once it is cooked and ice.
