Battenberg . . . make or buy?

I've just seen this on Asda website & haven't had it for years [yum] [yum] [yum]

Am I pushing my luck a bit after my recent 'wonky' chocolate cake do you think, to want to try making some myself? Or shall I just bung some in my trolley & let the factory it's produced in do the work for me?

Yes the price was extortionate.

The recipe I have only calls for a square tin. I will dig it out and see what it says about dividing the mixture up.

Do you have to use apricot jam to stick the marzipan on or can you use egg white or something else?

lucysmam I used the recipe on the waitrose site (just google battenburg cake recipe) but I didnt make my own marzipan I just bought natural from the supermarket!

The only tip I have is dont wrap the finished cake in foil as the marzipan sticks lol

Make, make, make!

I make a big one - I use two 2 lb bread tins, one for each colour/flavour sponge, then simply trim the cakes and stick them together. I use whatever home-made jam we've got in, raspberry is our favourite.

We have even been known to make the marzipan!

readyfornum2, thanks for the tip about not wrapping in foil, will keep it in mind

The cake tin's a tad expensive, think I will stick to my original loaf tin idea & hope for the best

If it went well, I might be inspired to dig out my recipe, find out what tin I lack, go out and buy it, and have a go myself.

I imagine a homemade battenburg would be much bigger than a shopbought one?
