160ml milk
2 teaspoons of lemon juice
150g of butter (softened)
220g of caster sugar
2 eggs
300g of self raising flour
1/2 teaspoon of bicarbonate of soda
1 cup of mashed banana (i used 4 small bananas)
100g of dark chocolate, grated finely.

  1. Preheat oven 170C/150C fan-forced)greece deep 22cm round cake tin, line the bottom.

2.Combine milk and juice in a small jug: stand for 10 minutes.

  1. Meanwhile, beat butter and sugar in a small bowl until light and fluffy. Beat in eggs one at a time until just combined. Add the flour, soda, banana, milk mixture and chocolate.
  1. Spread mixture into tin, bake for about 1 hour 10 minutes, stand cake for 5 minutes, turn top side up onto wire rack to cool.
  1. meanwhile make creamy choc frosting; spread cold cake with frosting.

Frosting;
200g of dark eating choc
160g of icing sugar
120g of sour cream.

Melt choc in a medium heat proof bowl over a medium saucpan of simmering water, gradualy add the icing sugar and sour cream.

The cake turned out fine without the bicarb, we hav'nt iced ours as dd1 is in a hurry to eat it

Thank you! Am saving this thread. Am not a big baker but have been doing more recently and enjoying it. i don't own a cake tin but... am weirdly loving the Robert Dyas near the office so I think I'll stop by in the coming weeks to pick one up.

I love banana chocolate cake.
