Just a basic selection of Peppers, Onions, Mushrooms & Cheery Toms. Mine are either a pile of mush or cremated to the size of grape....please help, another disaster looming for tea time

If they turn to mush, add a can of toms for ratatouille

I use a griddle pan for mine, with very very little oil

aaah I have a George Foreman, wonder if they would be better in there than in the oven? (would I toss them in oil first )

i never get on very well with roasting mushrooms or tomatoes tbh. I find toms and peppers only need 15 mins max in the oven so just stick them in near the end. i usually roast 'firmer' less 'watery' veg - eg, always lots of carrots (scrummy), potatoes, butternut squash, sweet potato. they seem to keep their shape better. sorry it won't help you tonight though!

ps like the sound of your Cheery Toms! Do they have smiley faces?!

Ha Ha Snooks, wish they did the kids might eat them then, maybe I should squewer (sp?) the buggers as they always seem to turn out nice on a BBQ.
