Can anyone suggest a really tasty rice recipe - to use as a side dish?

I was going to do chicken schnitzel (chicken, bacon and wine)and serve it with rice but I always find it a bit lacking on the schnitzel bit so i want something to make the rice tasty beforehand. Any suggestions?

What about red cabbage? CHop up, put in a frying pan with big knob of butter.
Add a cup of stock, cover and simmer so that the cabbage steams. When it goes more translucent, add a bit more butter and about 6 shakes of balsamic vinegar. Tis gorgeous. Not a rice recipe but might be nice!

Ah, the only problem is...have no cabbage! I have some rice though ...

ummm... what about doing the rice couscous style, ie cooking and cooling it, throw in some roasted veg and a bit of vinaigrette?

A friend of mine who is a good cook sometimes uses veg or chicken stock rather than plain water when doing rice.

Tastes better than it sounds!

cook rice in chicken stock, add veg to it (sweetcorn / peas / little broccoli / small bits crunchy carrot)

Thanks, might try that. Can't do anything at the moment as ds having a mahooosive tantrum upstairs after I refused to finish reading their (his and dd's)bedtime story because they wouldn't listen and kept pulling the book. I can't decide who is the bigger child, me or him. Am waaaaaay to wound up to go up though.
