I have got a load of cooking apples to use and need some inspiration!

I am fed up with crumble and have done a tart tatin.
Any other ideas which are not too complicated would be much appreciated!

Apple jelly. So easy. Chop up apples (no peeling/coring), cover with water.Simmer till soft. Strain. With resulting "juice" add about 100g of sugar to 100ml juice. Dissolve, bring to boil, simmer for 10 mins. Check for setting point. If no good, try again 10 mins later. Put into jam jars. Can add chopped up mint to make into mint jelly. It is great. I've done loads. Unfortunately our apples have all gone.

Oh and you could also make homemade mince meat too

chopped apples - decored
Mixed fruit
Allspice
Nutmeg
Cinimon
Suet
Orange zest and juice
Lemon Zest and juice
Brandy

I did mine over the weekend - yum

puff pastry sprinkle with sugar
lay apples down one side, sprinkle with sugar and mixed spice (optional add raisins)
fold over and seal with milk
brush with milk and sprinkle with sugar, cut air holes all along
bake for 20 mins

serve with custard .. strudelly cheat thing

oooo! you are making my mouth water.
I like the sound of the apple muffins!!
And i have got some puff pastry in the freezer for apple strudel type thingy.

I might have a go at the apple jelly...being thick here possibly ...what do you use it for? Just as Jam? or is it supposed to go with savoury things..pork?

I core them and fill with mincemeat and chuck in the oven for 20-25 mins with whatever else is in there.

or peel and chop - add some other stuff like dried fruit, cherries anything you have lying around the the 'cake-making' cupboard put in oven proof dish

1 1/4 cup of sr flour
1/2 cup of oil
2 eggs (beaten)
1 cup sugar

mix all up in a big bowl and pour over the top and put in the oven for half hour or so until knife comes out clean. Nice hot with custard/ice cream

Chutney! I made some delicious stuff with some manky apples left at the bottom of the fruit bowl.
dice onion and apple, throw into a pot add spices, tamarind and balsamic vinegar, add a load of sugar, boil and simmer for 45 mins and pour into sterilised jars. Voila!
