Saddle of Rabbit with Rosehip Wine & Rosemary Butter Sauce

Serves 2

Ingredients

1 boned saddle of Rabbit, 1 oz chopped bacon, ½ pint chicken stock, 100ml Rosehip Wine (can use white or Rose) 1 sprig of Fresh Rosemary, 2oz unsalted Butter, 1 tspn whipped double cream, seasoning.

Pre heat the oven to 200C ? Gas 6. Heat a large pan & add 1 oz butter and the bacon and colour slightly. Add the Rabbit fillets and fry for approx 3-4 minutes until nicely coloured. Remove the fillets and place in a baking tray & finish in the oven for 8-10 minutes. Meanwhile drain all the fat and bacon from the pan and deglaze with the wine, add the stock/consommé, stir and reduce by half. Whisk in the remaining butter, then the cream, and then leave the rosemary in it for a few minutes, to infuse.
To serve, slice and fan the fillets and pour the strained sauce around.

They have a restauarant with a fully qualified chef at DH's work.

Once a month they have a cookery club, where the chef will show the foodies something slightly different.

Will see if I can get my hands on some of the backdated ones and post them. [drool emoticon]

God, I AM sorry!! Sure it will be delicious. it's just the only thing I can't do really. Once went for dinner to my sister's French MIL who is a fantastic cook (her jams are to die for-am jealously guardinga divine fig and vanilla from the pups ).
She did rabbit! I was devastated.
