salsa verde on side - heaps of parsley, mint, garlic, couple of anchovies, capers, lemon juice, mustard, whizz in processor/hand blender

great with meat or fish

My DH does lovely crushed new potatoes, you put some olive oil (quite a lot) in with the potatoes and crush with the back of a fork and then add the herb of your choice.

Tarragon is lovely, but I'm sure something like coriander and chilli would be lovely as well.

i chop the spuds roughly, steam and then mix sour light cream with wholegrain mustard and a crushed garlic clove. Once steamed - leave potatoes to cool. Add spuds to the mix for a potato salad.

steak - I wrap in proscuitto and put in oven with huge mushrooms. cook for around 20 minutes and then serve in a stack - huge mushroom, steak on top, potato salad on side.

I do a tangy sauce with steak sometimes - sundried tomatoes, garlic and creme fraiche, all cooked in the pan after the steak somes out. It sort of depends what you have in your fridge and cupboards though
