Embarrassingly simple chicken question...

I want to make a chicken casserole for tonight. If I browned the chicken pieces now and set them aside to cook in the casserole later (i.e. about 6pm) that would be Salmonella City, wouldn't it?? I should brown them and then casserole them immediately afterwards, shouldn't I?

I have a feeling I know the answer to this one already but just wanted to check.

It did occur to me to suggest parking it outside the back door, acnebride...but if Snafu's in Kent she may need to enlist Mountain Rescue to get it back again.

Hmmmm, kitchen has no heating anyway so is baltic even out of the fridge.

If your kitchen really is quite cool, it might be OK out of the fridge, although it would still make me uncomfortable. (I'm in Florida so I don't have that option!)

It'll be fine then if the kitchen is that cold - you have to cool it really well before you put it in the fridge anyway, otherwise you just warm the fridge up.
