We had this last evening and again tonight. I'm afraid ours came out of a packet (and the nanny threw the old pack away, luckily I'll remmeber how to make it from last evening). There was only salsa in the pack I bought.

Can you make them with something else than chicken, peppers and onion? What else is a good combination (taste, filling and no too expensive)?

MrsBadger · 04/10/2008 17:25

you can use salmon, or tuna fillet, or steak (not really cheap though)

better to make chilli and serve in tacos or tortillas - you need less meat and can bulk it out with beans etc

I know it's a day late, but a great recipe here for anyone thats interested.

I do slimming world fajitas, they're very basic but very yummy. They don't taste like packet ones, but they taste mexican and the kids prefer them.

Do tortillas and add sour cream, guacomole as usual.

Chicken - leave to marinate for however long in juice of a lime and dried coriander and dried oregano.

Then fry it (I do in frylight) and put in bowl to serve.

Then fry 2 onions a red pepper and a green pepper (recipe says to add garlic and chili but i just sometimes add a bit of chili powder) I do it in the same pan to get the chicken flavours on the veg.

Then I serve with homemade salsa (2 chopped roasted garlic cloves, 3 chopped tomatoes, half a chopped red onion, 1 chopped red chili 2tsp fresh coriander and juice of half a lime)
