Risotto without wine???

I have just realised that I don't have any wine to go into tonights risotto - only half a bottle of Port.

Are we game?

Actually now I remember the vodka idea was based on a Jamie Oliver recipe that worked well.

OK. So beetroot and fennel risotto is fab.

scrub 1 medium sized beetroot, wrap in foil and bake at 200 degrees for 40 mins. Cool, then peel and chop into cubes about 7mm square

Chop fennel and onion finely, fry in olive oil until soft

Add in about 200g arborio rice and stir

Add stock 1 ladelful at a time until it is absorbed

After about 10 mins of adding stock, add the beetroot. Keep adding the stock.

Cook until your preferred texture. Can add cheese if you like.

It does come out quite a bright colour!
