Loved the programme last night and wanted to do the onion in puff pastry thingy but cant remember the recipe.

Anyone remember?

All I think was cut the onion but not right through. black pepper, butter into the slits, on the pastry, top on, score edcge thing and cook. Have I missed something important?

I think he also sprinkled salt and some brown sugar over the onions, and painted eggwash over the pastry/sealed the pastry edges with eggwash.

I enjoy that show too, he's a likeable eccentric

I got a bit overexcited by all the different onions on show at the onion fair thus proving once and for all that I have no life.

thanks for that, yes the brown sugar is very important to give it that caramelly taste.

Also those soups looked superb. Always have a pumpkin for each of the 3 dc at halloween and just lobbed the pulp into the bin! Not this year, I shall def be attempting the soups. I found the recipe for that on the BBC website, but the baked onion one wasnt on there.
