please - I need a really simple recipe - was at the market today and leeks and potatos were really cheap - so I bought some thinking "mmm leek and potato soup - haven't had that since I was a kid"......

Now I've got home I've realised I haven't got a clue where to start

Thanks

Promised the DS's lots of homemade soup and homemade bread with butter (a treat in this house as we usually have shop bought bread and margarine )

I sweat leeks with a bit of olive oil until soft.

Add peeled and chopped spuds.

Add a couple of pints of veg stock and hot water (until veg is covered)

Boil until potatoes are soft.

Liquidise and add a small tub of creme fraiche, or some natural youghurt, milk or cream an lots of black pepper.
