Yum - Have just 'invented' toasted tortilla wraps.... highly recommended...

Was looking for inspiration in the fridge for lunch and only found:

half a jar of pizza tomato paste;
some leftover tuna;
mini tomatoes
cheese
some yellow pepper
tortilla wraps

So mixed together grated cheese, tuna, chopped tomato and chopped pepper, with some basil and black pepper.

Spread the centre of a tortilla with a thin layer of tomato pizza topping.

Filled the centre with the other mixture (not too full) then folded sides in ends in, to make an oblong 'envelope'.

Toasted it in the 'George Foreman' grill for about 2-3 minutes.

Wow - it was delish....

Now WHY have I never done that before?

(Kids will be getting them for tea now too!)

I do similar thing but dry fry them in a pan

makes them all crispy and the cheese oozes out in a satisfyingly "I am full of fat" manner

I don't fold mine though, just one tortilla flat, put filling in, another flat tortilla squished on top, put in pan, dry fry both sides until crispy

How do you eat it though, Olive - is it a knife and fork job?

What I liked about mine was that it was so..... hygenic and self-contained...

No, no, no - this is different... we already 'do' quesadillas and mexican tortillas etc, but no, this is 'toasted sandwich'/ kids tea section.....

I chop mine into neat litle triangles, like a cake

I do mine like a double 'pizza' - spread tomato sauce on bottome one - then pepperoni or sausage or the like and then cheese and then put another tortilla on top and do the same again. Pop in oven for 5 mins and then cut into triangles like a 'real pizza'

Doesn't the cheese ooze everywhere when you try to cut it??

Am still favouring the wrapped up/sandwich toasted version......

we do this we use pesto and mozzarella somtimes too with olives and basil ect

No - there's not too much cheese to ooze out - and I think it helps to have a really sharp knife to cut it.

I do that but put in under the grill. Pizza wraps I call them.
Fab for a quick tea with salad on the side. We like Quesadillas too
