So, like everyone else, we are trying to save money where possible. I have a chicken carcass that I will be stripping later and making stock. What can I make that isn't soup with the leftovers?

Have had soup for the last 3 Mondays.
What else can I make with fresh stock and meat and general fridge and cupboard contents?
Nothing elaborate.

We always do risotto with some of the stock and oyster mushrooms.

Curry, Stew, risotto, pie, fried rice, coronation chicken, do with salad and Jackets.
We never seem to tire of left over chicken

You can freeze the stock and use it later on in the week for soup etc

plenty of chinease recipes call for chicken stock,
or you could freeze it for another occasion

I make stock out of every chicken carcass we have so I've got tonnes of stock in the feezer ! DH always forgets and ends up buying the crappy ready made stuff from Tesco.

DP makes a fab thing with a can of Campbell's Condensed Mushroom soup - bung in all left over meat with the soup, stock instead of water and some extra mushrooms, some frozen peas. Tastes fabulous served with a jacket potato.
