Anyone got an easy/tasty recipe for Minestrone soup?

Tried and tested please. Have sussed Lentil soup now dh wants me to master Minestrone!

I have used this one before and it was good - I think basically you can chuck in whatever veg you have!

mmm yummy thanks WS - nice link on that page too for rustic bread - will try at the weekend. Once I eat the HUGE pot of lentil I made on Sat.

This is fab, fab, fab.
Chop two sticks of celery, two leeks and two cloves of garlic. Soften under a medium heat for 8 minutes. Add a tin of tomats, some macaroni and 1.5l of veg stock. Bring to the boil and simmer for 20mins. Add chooped mangetout and green beans and a spoonful of green pesto and cook for 2 mins. Add some grated parmesan cheese when serving. It's delicious. You can also add haricut beans when you're adding the tomato/macaroni and stock if you want to thicken it. The whole thing takes less than 40 mins and is my favourite soup!
