Tried and tested methods for cooking a chicken. Which is best, slow and low, or fast and high?

Have recently heard from a turkey farmer that it's better to cook for less time but at a high temp.

What works best?

I've always cooked at lower temp but for longer.

I cook high and fast with tin foil wrapped over the top.

I have a fan oven, and cook a large chicken at 160C for 1.25 - 1.5 hours (ie quick and cool).

When I cook a turkey, I can do it in less than two hours upside down. Apparently this works well for a chicken too, so can be very quick.
