Scrummy yummy SAUSAGE CASSEROLE recipe.....

Found this recipe online the other day and it is totally delicious so thought I would share:

Sausage, Red Onion and Apple Casserole

150 ml apple juice
450 g sausage
1 large onion(s), red, sliced
1 teaspoon sunflower oil
500 g New Potatoes, drained, or other brand
400 g canned tomatoes, chopped
2 medium cooking apple(s), peeled, cored and sliced thickly
1/4 teaspoon dried sage
1 pinch salt
1/4 teaspoon pepper

Cook the sausages under a moderately hot grill for 6-8 minutes, turning half-way through cooking.

Meanwhile, heat a non-stick saucepan. Mix the onion with the oil. Add to the pan and fry for 2-3 minutes, stirring continuously.

Stir in the chopped tomatoes, apples, sage and apple juice. Gently bring to the boil and then add the sausages and potatoes. Season with salt and pepper.

Reduce the heat and simmer, covered for 10-15 minutes.

is it bad that I think the things I like most is how easy it was to make, how quick it was to make and yet it LOOKED like there was a lot of effort went into it

got to LOVE receipes like that

Do you think it would work with lentils and butter beans rather than potatoes?

DWP - would work perfectly with butterbeans, we were discussing that last night as I had also made new potatoes like a muppet - also peas suggested!!

for those making it, I added a big tblsp of tomato puree too to make the sauce a bit thicker

and completely agree - chuck it onto the receipe section!

does anyone know how long cooked sausages keep in the fridge? I have some from last Fri, will they still be ok?

I wouldn't LittleMyDancing, they sound a bit elderly at nearly a week old. I do tend to veer towards the overcautious when it comes to food though.

No way, that's almost a week! I'd possibly reheat them the next day, but not after that.
